The vehicle collided with the pedestrian in New Road at around 9pm on Monday, 22 January after failing to stop for police.
Officers had requested the vehicle stop shortly before the crash and a pursuit was authorised.
Following the crash, the passengers got out and fled the scene. Police attempted to locate them but were unable to find them.
Officers also provided first aid to the injured man who was taken to hospital where he remains in a serious but stable condition.
The Met Police said: “Enquiries to trace the driver and passengers of the car remain ongoing.”
A London Ambulance Service spokesperson said: “We were called at 9.12pm yesterday (22 January) to reports of a road traffic collision in New Road, Rainham.
“We sent an ambulance crew, a paramedic in a fast response car and an incident response officer to the scene.
“We also dispatched a trauma team from London’s Air Ambulance in a car.
“We treated a patient at the scene and took him to a major trauma centre as a priority.”
